Grilled Lemon Chicken with Tomato and Feta Salad

For the Marinade:

  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 cup olive oil
  • 4 boneless, skinless chicken breasts

For the Salad:

  • 2 cups cherry tomatoes, each cut in half
  • 1/2 cup crumbled feta cheese
  • 1/2 teaspoon chopped oregano leaves
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Celtic sea salt and freshly ground black pepper

Instructions

  1. Whisk 1 tablespoon lemon juice, garlic powder and olive oil in a small measuring cup. Place the chicken breasts in a single layer in a large baking dish. Pour marinade over the chicken and let the meat marinate for 10 minutes at room temperature.
  2. Preheat the grill to medium. Grill chicken for 4-5 minutes per side until cooked through.
  3. Toss tomatoes, feta, oregano, lemon juice and olive oil in a medium bowl. Season with salt and pepper to taste. Serve salad on top of chicken.
