1pound raw wild shrimp, peeled and cut into bite-size pieces
1/2cup fresh lime juice
1pint cherry tomatoes, cut in half
1/2cup chopped red onion
1/2cup cucumber, chopped
1/2cup fresh cilantro leaves, chopped
1 jalapeno pepper, diveined, seeded and chopped
1/2 teaspoon Celtic sea salt
Instructions
Place shrimp and lime juice in a shallow dish. Cover, and put in the refrigerator to marinate for 30 minutes.
Place tomatoes, red onion, cilantro, jalapeno pepper, sea salt and shrimp and lime mixture in a medium bowl. Stir until incorporated. Season to taste with salt. Serve cold.
