Dark Chocolate Creams

12 ounces dark chocolate
1 cup heavy cream or coconut milk
4 large egg yolks
pinch of sea salt
1 tablespoon vanilla extract


Put the chocolate in a blender. Bring cream to a simmer over medium heat. Just when cream simmers pour it over the chocolate in the blender, put the top on the blender and blend until smooth. Add the egg yolks, pinch of salt, and vanilla and blend until smooth. Divide into 4 small bowls and serve warm or cold.
