Easy Roast Beef Recipe

  • 3 pound sirloin tip roast
  • Celtic sea salt and freshly ground black pepper
  • 2 tablespoons tallow, duck fat or ghee

Instructions

Preheat the oven to 275 degrees F and adjust the rack to the middle position. Season the roast on all sides with sea salt and pepper.

Heat a cast iron or stainless steel, ovenproof skillet over medium-high for 2 minutes. Add the tallow and swirl to coat the bottom of the pan. Sear each side of the roast until golden brown on the edges. About 2-3 minutes per side. Place the roast in the oven and bake for 20 minutes per pound. For a 3-pound roast, bake for 1 hour. 

Remove the roast from the oven and tent it with foil. Let the roast sit for 15 minutes and then serve.
