If you’re looking for a foolproof easy roast beef recipe, you’re in the right place. This method creates tender, juicy roast beef with a beautiful crust every time and you don’t need any fancy equipment to make it. Whether you’re cooking for a weeknight dinner or a special gathering, this recipe is simple, nourishing, and full of flavor.

How to Make Tender Roast Beef: Go Low and Slow

The secret to tender roast beef is cooking it low and slow. High heat can dry out the meat and make it tough, but using a lower oven temperature allows the roast to cook evenly and stay juicy on the inside.

For this recipe, you’ll sear the beef first to lock in the flavor, then roast it at 275°F for about 20 minutes per pound. A 3-pound sirloin tip roast will take about 1 hour in the oven. After baking, let the roast rest for 15 minutes under parchment and foil. This helps the juices redistribute, so the roast doesn’t dry out when you cut it.

Choosing the Best Cut for Roast Beef

For a classic roast beef, a sirloin tip roast is one of my favorites. It’s lean, flavorful, and becomes tender when cooked slowly.

When it comes to beef, quality matters. Pasture-raised and organic beef is nutritionally different from conventional feedlot beef. Pastured beef is higher in omega-3 fatty acids, conjugated linoleic acid (CLA), and key minerals, and it’s raised without hormones or unnecessary antibiotics.

If you’re looking for good sources of pastured beef near you, I highly recommend checking out Eat Wild. It’s a fantastic resource for finding local farms. Personally, I get most of my beef from 1915 Farms in Texas, and their meat is some of the best I’ve ever eaten.

Tips for the Best Roast Beef

  • Bring your beef to room temperature before searing. This helps it cook more evenly.
  • Use a heavy pan, like a cast iron or stainless steel skillet, for a nice crust.
  • Season generously with Celtic sea salt and black pepper. Simple seasoning lets the flavor of the beef shine.
  • Don’t skip the resting time after roasting. This step is key to juicy meat.

Easy Roast Beef Recipe

Ingredients:

  • 3-pound sirloin tip roast
  • Celtic sea salt and freshly ground black pepper
  • 2 tablespoons tallow, duck fat, or ghee


Instructions:

  1. Preheat oven to 275°F and adjust the rack to the middle position.
  2. Season roast on all sides with sea salt and pepper.
  3. Heat a cast iron or stainless steel, ovenproof skillet over medium-high for 2 minutes. Add fat and swirl to coat.
  4. Sear each side of the roast for 2–3 minutes, until golden brown.
  5. Transfer skillet to the oven and bake for 20 minutes per pound (1 hour for a 3-pound roast).
  6. Remove from oven and tent with foil for 15 minutes before slicing and serving.


How to Store Roasted Beef

Once the roast beef cools, transfer it to an airtight container and store it in the refrigerator for up to 4 days. You can also freeze it in slices or chunks for up to 3 months. When reheating, warm it gently on the stove or in a low oven so it doesn’t dry out.

What to Do with Leftover Roast Beef?

Leftover roast beef is incredibly versatile. Here are a few of my favorite ways to use it:

  • Make a quick beef and vegetable soup.
  • Toss into a grain-free tortilla with veggies for a wrap.
  • Add to a salad for an easy protein boost.
  • Make a beef hash with potatoes, onions, and herbs for breakfast.

The Best Sides to Serve With Roast Beef

Roast beef pairs beautifully with so many sides. Some of my favorites include:

  • Slow-cooked greens with garlic
  • Creamy mashed potatoes or cheesy hash brown casserole 
  • Sautéed green beans with garlic and ginger 
  • Copycat Olive Garden salad 
  • Sourdough bread for soaking up the juices

Heat a cast iron or stainless steel, ovenproof skillet over medium-high for 2 minutes. Add the tallow and swirl to coat the bottom of the pan. Sear each side of the roast until golden brown on the edges. About 2-3 minutes per side. Place the roast in the oven and bake for 20 minutes per pound. For a 3-pound roast, bake for 1 hour. 

Remove the roast from the oven and tent it with foil. Let the roast sit for 15 minutes and then serve.
