If you’d like to serve this with a full recipe of the chicken fajita meat, then I would triple this recipe, so there are enough areas to serve with the chicken and vegetables. Makes about 10 arepas.

  1. Combine almond flour, coconut flour, sea salt, eggs and 4 tablespoons butter in a large bowl until combined. Take about 1/4 cup spoonfuls of the dough and form into a 4-inch by 1/2 inch disk. Repeat with remaining dough.
  2. Heat 4 tablespoons ghee in a large skillet over medium heat until hot. Place dough disks in the hot oil and fry for about 2-3 minutes per side until each side is golden brown.
  3. Serve with Chicken Fajitas meat and vegetables, avocado, cilantro and a spritz of lime juice.
