It seems the “dog days of summer” have hit most of the country. Hot daytime temperatures make me search for foods that don’t require heat to prepare. Salads, cold fruit and yogurts have graced our menu often this week. Strawberries and cream is one of my summertime favorites; adding softened cream cheese and preserves gives it a bit more sustenance and sweetness. This light, creamy fruit dip is great with berries and dynamite over a piece of pound cake.
Berries and Creamy Fruit Dip
2 ounces cream cheese, room temperature
2 tablespoons raspberry preserves
1/2 cup heavy cream, whipped to soft peaks
2 pints berries, washed
Place cream cheese and and preserves in a mixing bowl. Beat on medium speed until combined and creamy. Fold in whipped cream with a spatula. Serve with berries.
