So what do you think of the changes? I thought it was time for a little facelift and Thomas from TCDawson Designs built this fabulous blog for me! The header photo was taken by Helen. It’s one of the many gorgeous photos she shot for my cookbook. I also want to add another dimension to the blog so I’ve started another section called, “Outside the Kitchen”. When you make the change to organic living, after a while you start looking at other things to change like household cleaners, soaps, and bath and body products. I’ve found a slew of them over the years and I plan to share my favorites with you in hopes of helping you not only make changes in how you eat, but what you use in your home as well.
Remember back in December, when I told you about the big engagement? Well, the wedding day is almost here for the lovely duo so I’m off to Texas for a bit! Serves: Makes 4 sandwiches
Ingredients
- 1 cup pitted dates
- 1/3 cup toasted pecan pieces (or dehydrated)
- Zest of one orange
- 2 tablespoons sherry
- 12 ounces smoked turkey
- 8 pieces whole grain bread or gluten-free bread
- Softened butter to spread on bread
Instructions
- Put dates, pecan pieces, zest and sherry in the bowl of a food processor and pulse until it becomes a smooth, thick paste. Preheat your panini pan or press. Butter one side of each piece of bread. Spread a generous portion of the date spread on four pieces of bread (spread on the dry side). Top with turkey and then the second piece of buttered bread. Make sure the buttered side of the bread is facing outward. Place in your panini press or pan and cook until golden brown. Cut in half and serve immediately.
