Corn Dog Muffins (Grain-Free)

These little Corn Dog Muffins taste so much like a corndog you’ll be amazed! The kids will love them!

Corn Dog Muffins (Grain-Free)

I used my “cornbread” batter and inserted a two-inch piece of organic hotdog into each mini muffin before baking. So easy!

Corn Dog Muffins (Grain-Free)

You can dip them in ketchup (see my cookbook for a great homemade recipe) or classic yellow mustard or eat them alone. They also freeze well after baking – to reheat, place them in a 300ºF oven for about 15 minutes until thawed and warmed.

Ingredients

Units
  • 2 cups almond flour
  • 3 tablespoons coconut flour
  • 3 teaspoons baking powder (make sure it’s grain-free)
  • 1 teaspoon Celtic sea salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons coconut sugar
  • 2 large eggs, lightly beaten
  • 8 tablespoons unsalted butter or 6 tablespoons ghee, melted and cooled slightly
  • 1 cup sour cream (or plain, whole coconut yogurt)
  • 1/2 yellow onion, minced
  • 8 organic hotdogs, cut into 2-inch pieces

Instructions

  1. Preheat oven to 375°F and adjust rack to middle position of oven. Butter each cup in a mini-muffin pan. Whisk almond flour, coconut flour, baking powder, sea salt, baking soda and coconut sugar together in a large mixing bowl. In a separate bowl, whisk together the eggs, butter, and sour cream. Pour sour cream mixture and onions into flour mixture and gently fold all ingredients together. Spoon 1 tablespoon of batter into a muffin cup and then push a piece of hotdog into the center. Repeat with the remaining ingredients. Bake 16-18 minutes, until the muffins are turning golden brown on the edges. Cool for 10 minutes and then carefully transfer the muffins out of the pan and onto a cooling rack. Cool for an additional 10 minutes. Serve.

    Once I quit grains, I have gotten sad over not being able to eat things... and some of those things were items I never used to eat anyway! Like Butterfingers... Corndogs are one of those things! This looks so easy to make! I just have to grab some good hotdogs :) Thanks for doing the work you do!

    These tasted delicious! I was kind of concerned about using almond flour to mimic cornbread but went with it anyways. I used xylitol instead of coconut sugar and lactose-free yogurt instead of cream cheese. I used grass-fed cow hotdogs. I also didn't have grainfree baking powder so I only used a teaspoon of the baking powder I had and then a little extra baking soda to compensate. It didn't seem to matter--the muffins were light & fluffy. I was being impatient after they got out of the oven so they were a little crumbly when warm but once they cooled down, they held just fine. I was concerned my whole family would not like them, but they all ended up thinking they were awesome ! Beforehand, when I explained the concept, they looked unsure that it would work out. Lol In my opinion, they taste almost exactly like a "normal" corndog. Yes, even without a real corn-bread batter. I think the chopped onion really helped it seem like cornbread. I will definitely be making these again. I think they needed a touch more salt but I went a little light on the salt since I added more baking soda. I think it might be one of my favorite recipes. My sister said (two bites in), "You could sell these!" Excellent recipe! Thank you so much for coming up with healthy stuff like this. :D

    These are delicious! I used paper wrappers instead of buttering each tin & will follow your instructions next time (the breading stuck to the paper - but we didn't mind because it tastes great!). Thank you :)

    These were so delicious but I couldn't get them out of the pan without them falling apart completely. Is there anyway to add something to this recipe to act as a sort of binder? I am very new to Paleo so I don't know much about cooking with these types of flours. Thanks for super yummy recipe that my kids loved though!

      Freeze and then reheat straight from freezer in a 300F oven for about 15-20 minutes.

    I have a question about the instructions. It says at the top "makes about 36 mini muffins" but you only say to cut up 8 organic hotdogs into 2" pieces and that only makes about 16 "dogs"... where are the other 20 coming from? Also, what is considered a serving size? I can't find that here!!!! Thank you!

      The hot dogs are each cut into bite-size pieces, and this equals to about 36 pieces.
