Gluten Free Chocolate Centered Doughnut Muffins

Gluten free chocolate centered doughnut muffins are the perfect way to celebrate 3 years of Deliciously Organic!

3 years. I wasn’t aware of what I was beginning 3 years ago today. I started it because I was teaching cooking classes and had friends calling asking for information and recipes. After several months, I realized I needed a central place to point everyone with good resources and recipes. I’d heard of a “food blog” but had never seen one. I thought it could be a good way to share with my friends and family my ideas and recipes. The first several months of posts were rough. Even though I knew how to cook and bake, I had no idea how to properly write a recipe (I’ve gone back and edited them all for you). I also didn’t know how to take photographs of food. And dang, was I wordy!

Then it started to grow. My friends read and referred their friends. You began reading and coming back. After three years I’m looking back and never would have guessed it would have grown like it has. Thank you.

I’ve said this before, and I want to repeat it – this blog is entirely for you. I want to give you the best recipes possible with real, nourishing ingredients. I want to encourage you and provide inspiration and information. I’m always open for suggestions; please don’t be afraid to point out grammatical errors as they creep in every so often.

I’ve been so blessed by all of you. We currently live at Edwards Air Force Base which is way out in the middle of nowhere and being able to connect with all of you on a daily basis makes this place seem less isolated. My husband works very long hours and his job sometimes requires him to be gone for months at time. Conversing with you here has made Edwards less lonely.

Before realizing it was my blog’s 3rd birthday, I was going to give you a salad recipe. But really, who wants to celebrate with salad? So instead it’s doughnut muffins, filled with chocolate and rolled in coconut sugar. The kids were giddy when I started rolling these warm muffins in the cinnamon sugar mixture. When they bit into a muffin I asked, “So does it taste kinda like a cake doughnut?” Their response, “Kinda? These taste just like a doughnut!”

Gluten Free Chocolate Centered Doughnut Muffins

Ingredients

Units

For the filling:

  • 1/3 cup heavy cream
  • 3 ounces dark chocolate

For the batter:

  • 11 tablespoons unsalted butter, room temperature
  • 3/4 cup organic whole cane sugar or sucanat, ground fine in a spice or coffee grinder
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1 cup arrowroot
  • 1 cup sprouted oat flour
  • 1/2 cup sprouted sorghum flour
  • 1/2 cup sprouted rice flour
  • 2 1/2 teaspoons baking powder
  • 2 1/2 teaspoons unflavored gelatin (I prefer Bernard Jensen)
  • 3/4 cup buttermilk

For the sugar coating:

  • 3/4 cup coconut sugar
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Pour cream into a small pot and heat until simmering over medium heat. Remove from heat and add chocolate. Stir until smooth. Set in the refrigerator until ready to use.
  2. Preheat oven to 350 degrees F and adjust rack to middle position. Butter each cup of a 12-cup muffin tin. Place butter and sugar in the bowl of a standing mixer with beater attached. Beat butter and sugar until blended, about 1 minute. Turn mixer to low and add vanilla and eggs. Scrape the bowl with a spatula. In a separate large bowl whisk together arrowroot, oat flour, sorghum, rice flour, baking powder and gelatin. Turn the mixer on low and add 1/3 of flour mixture followed by 1/3 of buttermilk. Repeat until all ingredients are added and mix until just incorporated. Turn mixer off and stir batter a few times with a spatula. Using a spoon, fill each muffin cup half way. Top with a large dollop of chocolate mixture. Cover each muffin with remaining batter. Bake for 25-30 minutes until golden brown.
  3. Combine coconut sugar and cinnamon in a small bowl. When muffins are cool enough to handle, brush tops and sides with butter and then roll in the sugar mixture. Best eaten when they’re still a little bit warm.

      I haven't tested them with a gf flour mix so I can't say for sure, but you could give it a try. These 4 flours are my favorite combination, but I don't always use the same ratios. If you try it with a gf mix, let me know how it goes!

    I am having so much fun learning new things from your blog and recipe book!! My daughter and I actually fight over the book while baking since we both try to cook two different recipes at the same time. It has given us some fun times in the kitchen. I was curious which food processor you recommend. I am having a hard time with the crust recipe when making the white chocolate and rasberry pie. Thanks for the info. Lisa

      Thank you Lisa! I've had a cuisinart for over 15 years and I love it. Buy the 14-cup if you can. It's big enough to handle the big recipes. :)

    ohh, I swoon over stainless steel stuff - especially measuring cups which are so much easier to clean oil out of than plastic ones that always have a greasy film. Also, the muffins looks Ah-MAZ-ing!!

    Congratulations on your 3rd anniversary! I am new to your blog, so you may have answered this question in the past. I see in your receipes you use whole can sugar or sucanat. Can evaporated cane juice organic sugar be used as a substitute? Or can organic pure can sugar be used? I have seen both of these on the shelves of the store I shop at; therefore, was wondering if they were all interchangeable?

      You can substitute with those sugars. The reason I don't use them is because they are processed. Keep in mind that I test my recipes with the ingredients listed so if you substitute with a different sugar the end result might be a bit different.

    Happy Birthday!! I am so thankful for you, your cookbook, and this site! I discovered you last spring when my family totally revised our eating habits. I had been trying to eat "healthy" and low calorie/low carb for so long and turning to quick fix dinners, endless amounts of pre packaged boring boneless/skinless chicken breasts, and 100 calorie snacks. Now we are eating yummy REAL food, feeling more satiated, and I am finally enjoying food again. Your guidance on recipes and pantry essentials has made this seeming overwhelming at times transition so much easier!!

    Congrats!! I LOVE your site!! I've made the skillet pizza crust two weekends in a row and my family loves it:-) I also have your cookbook, and the chocolate chip cookies are AMAZING. We are having the butterflied chicken this week:-) Thanks for all your great work. You really make healthy eating yummy!! I know my boys would enjoy these cupcakes...I'll whip them up as soon as I get the rice flour:-) Thanks again...you should be very proud! By the way, I lived in Lancaster/Palmdale for a few years and EAFB is way out there, but at least you can drive into the city...I sure miss Cali!

    I'm less than a year into Gluten Free and struggling with giving up wheat. I'm a super picky eater with texture issues. These look amazing! Like you, I live out in the middle of nowhere. Where do you get your gluten free baking products? Have you made any gluten free pita bread?

      I get them from a variety of places. I order from Azure Standard quite a bit. They have drop-off points all over the country. Or sometimes, I'll order their products with friends and split the shipping. If you're in the south there's The Bread Becker's. I also order quite a few things from the Amazon subscribe and save program. I don't have a pita bread recipe. You might want to try Gluten Free Girl's site.

    I'm also new to this site and I'm glad I have found it. We are struggling with gluten free. Our son has not fully been tested due to cash issues but did have some tests done and has antibodies in blood but dr just said to give him gluten free. So I am new at baking gluten free and my hardest part was finding a flour mixture I liked. Looking forward to making these muffins!!

      I'm sorry to hear of your struggles. I hope some of my gluten free recipes can put a smile on your son's face. :) I'm half way through a book called, "What Belly" by Dr. William Davis. It's a fascinating book about wheat and our struggles with it. I think I'm going to tweak my diet a bit more after reading it. I highly recommend the book and maybe it can help you find some simple solutions without spending too much money. If you're ever looking for a particular gf recipe let me know and I'd be happy to help out.

    Hello, I'd love to try and make these but there is no way I can find all those different flours. Can you just substitute all those different kinds for just a normal flour?

      You can substitute with white flour (I'm assuming that's what you mean by "normal"?) and omit the gelatin. I haven't tested the muffins this way, but that's where I'd start.
