Mango Lassi Smoothie

You can freeze the mango the night before so it's ready to go in the morning for your Mango Lassi Smoothie. As for variations, try adding some berries or flaxseed oil for added flavor and nutrients.
Frozen mango makes for a luxurious, creamy smoothie and a nice way to start the day. I always put a couple of organic, pastured egg yolks and a bit of grass-fed gelatin in my smoothies for extra omega-3, Vitamin A, and protein. And don’t worry, the yolks make the smoothie even more creamy – you can’t taste them at all!

Ingredients

  • 2 cups chopped mango, frozen (I prefer Champagne mangoes)
  • 1 cup raw milk (or 1/2 coconut milk plus 1/2 cup water for Paleo)
  • 1 cup whole yogurt (coconut milk yogurt for Paleo)
  • 2 organic, pastured raw egg yolks
  • 1 teaspoon unflavored grass-fed gelatin (optional)

Instructions

  1. Blend all ingredients until smooth. Serve. This smoothie also makes great popsicles!

    Yummy! I think I have to make this tonight. Do you think it would be okay without the eggs? I am pregnant and supposedly should not be eating raw eggs.

    I have to be honest, I'm so nervous about the raw eggs! But, I love and trust you so much (have made SO many of your delicious recipes) that I'm sure it's totally yummy! :)

      Just make sure they are from organic/pastured eggs and you should be good to go. And I promise - you can't taste it! :)

    This sounds delicious - I want to start adding raw eggs to my smoothies! Question though, why not the egg whites too (the whole raw egg)? Is it a health concern, or just doesn't taste right? I want to get the most out of my raw egg as I can! Thanks!!

      Raw egg whites are difficult to digest, so it's best to save them for a meringue. You can freeze the whites for later use.

    This is my sons new all time favorite smoothie, he won't eat mango (doesn't like the texture), but he loves it in smoothies. I use raw milk and they are so creamy and filling, it's a meal!
