Raspberry Coconut Smoothie

A few weeks ago, a friend of mine told me about this raspberry coconut smoothie recipe she has been making for her family. She said that they didn’t change anything in their diet or lifestyle, except this smoothie, and they are all losing weight.

Raspberry coconut Smoothie
The next week I was teaching a cooking class and many of the women said they had been drinking this same smoothie (as a substitute for breakfast) and they were having the same weight loss results. So, I am not making any promises, but it seems there is something special about this smoothie, so I thought I would share.

Serves: Serves 2

Raspberry Coconut Smoothie

You can substitute any berries of your choice in this recipe.

Ingredients

  • 3 tablespoons golden flax seeds
  • 1/2 cup coconut milk (preferably "Thai kitchen" brand)
  • 1 1/2 cups water
  • 1 cup frozen raspberries
  • 1 banana
  • 1 Tablespoon honey

Instructions

  1. Blend flax seeds in blender until seeds are ground. Add coconut milk, water, berries, banana and honey. Blend until smooth.
  2. *To change it up a bit, you can add different extracts (almond is my favorite) or, omit the berries, add an extra banana, and then a tablespoon of cacao powder for a chocolaty shake.

    Carrie, thanks for sharing this. I will have to give this a try w/my 9 & 11 year olds. Please post more lunch time fair for school kids. I'm trying to change our eating habits, slowly, and would love to know what to do for the kids that they might actually eat!

    I tried this recipe this morning, but the flax seeds wouldn't blend in the blender! I tried putting them in the food processor too but it was the same problem -- they just whir around and around and never touch the blades. Do you have any tips about how to get them ground? Do you have a special kind of blade in your blender that gets them? I ended up just giving up and eating a banana instead because I was late for work, haha...I would like to try this again though!

      I wrote this recipe a looooong time ago, so you bring up a good point. The best way to ensure they are ground is to grind them ahead of time. I usually grind them in a spice mill or coffee grinder before adding them to the rest of the ingredients. Or, if you have a Vita-mix you can grind them well before adding the rest of the ingredients. I'll make the edit to explain. I hope you do try it again, it's one of my favorites!! :)

      Also if you blend just the flax before you add the other stuff, it will grind them in a processor such as the magic bullet.

    I can't wait to try this recipe! It sounds so yummy! And it helps aid in weight loss, that will be a huge plus!! I've got ground flax seeds that I got at the vitamin store, and they blend well with my other smoothies. Maybe you should look into that for future reference :)

      I prefer Native Forest because there it's organic and doesn't contain any BPA in the lining of the can.

    I can't wait to make this in the morning! I bought the "NutriBullet" 2 weeks ago and have been making smoothies two times a day for the family. It also comes with a milling attachment. I just milled a bunch of flax seeds to boost the smoothies. Now the kids will never know!!

    I love smoothies, but I may be in trouble with this one because I'm trying to GAIN weight. My husband, my kids, and I are all a little underweight and it looks like this wouldn't help lol :) Looks delicious!

    Has anyone personally had results with the weight loss aspect of this? I know some say coconut oil (present in the milk) is beneficial for weight loss. Just wondering...

    Carrie I love your book The Grain Free Family Table. We too are paleo and initiated this lifestyle to reverse a rare inflammatory disease, and autoimmune disease. Your story and suggestions helped my family in the journey to recovery . I thought I read somewhere that you did a fast? Did you ever do a water and tea fast to speed the healing of intestinal permeability? If so how long. I read you limited your diet for 30 days to vegetables to calm down your system. Have you also found that as you healed you do not have the same food sensitivities and on special occasions reintroduce certain grains?
