Ingredients

For the batter (see below for dairy-free/paleo version):
- 8 tablespoons unsalted butter, melted
- 8 large eggs
- 1 cup whole milk
- 1/2 cup plain whole yogurt
- 1/2 cup pumpkin puree
- 1/3 cup maple syrup
- 1 tablespoon vanilla extract
- 1 cup coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon Celtic sea salt
- 2 tablespoons Pumpkin Pie Spice Blend
For the Dairy-Free/Paleo Version:
- 5 tablespoons palm shortening, melted
- 1/2 cup pumpkin puree
- 8 large eggs
- 1/3 cup maple syrup
- 1 cup canned coconut milk
- 1 tablespoon vanilla extract
- 1 cup coconut flour
- 1 teaspoon baking soda
- 1/2 teaspoon Celtic sea salt
- 2 tablespoons pumpkin pie spice blend
For Serving:
- 1 cup maple syrup, for drizzling
- 4 tablespoons unsalted butter (optional)
Instructions
- To mix either the regular or dairy-free version: Whisk wet ingredients in a large mixing bowl until incorporated. Whisk dry ingredients in a medium mixing bowl. Add the wet ingredients to the dry ingredients and whisk until smooth. Let batter sit for 5 minutes.
- Cook waffles on a ceramic waffle iron according to manufacturer’s instructions. Serve with maple syrup and butter (if using).
