I love making roasted vegetables whenever I get new produce.

Weย just had the most amazing week at Black Mountain Ranch in Coloradoย andย Iย can’t wait to tell you all aboutย it!ย But first, another Organic, Real Food on a budget tip.ย As soon asย weย got home,ย our CSA box was waiting for us. We got all theย organicย fruit and vegetablesย in the photoย above for just $20! If you’re not familiar with a CSA,ย it’s Community Supported Agriculture. Groups of peopleย get together toย supportย nearbyย farms by agreeing toย regularly purchaseย their produce.
Each week,ย I get a box of fresh, all organicย produce for a fraction of what Iโd payย atย the store. My produce box also exposes me toย vegetables I might not otherwise buy. My favorite way to prepare some of those mystery vegetables is roastingย them. Roasting brings out the sweetness in the vegetablesย โย a sure-fire way to get your family to eat them,ย too.
Think of my recipeย asย an outline. Use any combination of vegetables you like. And remember, it’s good to use a nice portionย ofย butter when eating vegetables to ensure maximum assimilation of minerals and nutrients.ย I’ll be back soon with stories from the ranch!
