Roast chicken with basil, goat cheese and sun-dried tomato is one of my favorite quick weeknight meals. It only takes about 10 minutes to prep and then you pop it in the oven to roast. So easy!
Ingredients for Roast Chicken with Basil, Goat Cheese and Sun-Dried Tomatoes
4 chicken breasts, bone-in and skin on
Goat cheese
Fresh basil leaves
Sun-dried tomatoes in olive oil
Ghee, melted
Celtic sea salt and freshly ground black pepper
How to Make Roast Chicken with Basil
This 7-ingredient roast chicken is super simple to make! First, preheat the oven to 425ºF. Then, place the chicken in a roasting pan and gently tuck the goat cheese, basil and sun-dried tomatoes under the skin. Brush with melted ghee, roast and then you’re done!

Ingredients
- 4 chicken breasts, bone-in and skin on
- 8 slices of goat cheese
- 8 large basil leaves (or 16 small to medium basil leaves)
- 8 sun-dried tomatoes in olive oil, drained
- 1 tablespoon ghee, melted
- Celtic sea salt and freshly ground black pepper
Instructions
Preheat the oven to 425 degrees F and adjust the rack to the middle position.Â
Using your fingers, gently loosen the skin from the meat with your fingers, leaving one side attached. Place 2 slices of goat cheese, 2 large basil leaves and 2 sun-dried tomatoes under the skin of each breast. Pull the skin back over the chicken as much as possible so the chicken won’t dry out. Repeat with remaining chicken breasts. Â
Using a pastry brush, brush each breast with melted ghee and season generously with Celtic sea salt and pepper. Roast for 40-45 minutes until the skin is golden brown and the chicken is cooked through. Serve.
